Kaaradaiyan Nonbu Adai

காரடையான் நோன்பு அடை


Kaaradaiyan Nombu / காரடையான் நோன்பு also known as ‘Savitri Vratham’ is an important festival for the women in the Indian State of Tamil Nadu. 

On this day, married women and young girls observe this Vratham and wear Sacred Yellow Threads / மஞ்சள் சரடு and pray to Goddess Kamakshifor the longevity and well being of their husbands, while unmarried girls observe this Vratham to get ideal person as their husband! 

Kaaradaiyan Nombu is observed on a chosen day when the transition takes place between two Tamil months, namely, Panguni and Masi. It is observed at the exact time when the Tamil month of Masi ends and the month of Panguni begins. In the Gregorian calendar, this festival falls in the month of March. Women observe a strict fast on this day and special feast is prepared for the occasion. 

A special kind of Sweet and Salty Adai called Kaaradai is prepared with Homemade Raw Rice flour and Black eyed peas! 






The type of Rice is a special kind of Rice which is called Kar Arisi / காரரிசி, which becomes very reason for the name of this Vratham, Kaaradaiyan Nonbu! 

The following is the Tamil chant while doing Neivedyam. 

"Urukaadha Venneyum 
Oradaiyam Naan Nootren
Orukkalum En Kanavar 

Enai Vittu Piririyadhirukka Vendum!"

"உருகாத வெண்ணெயும், 

ஓரடையும் நான் நோற்றேன்    
ஒருகாலும் என் கணவர் 
எனை விட்டு பிரியாதிருக்க வேண்டும்!"



 
I'm very happy to give you the preparation of two types of this Special Kaaradai here!


Kaaradai - Sweet:



Ingredients:

Homemade Rice Flour - 1 cup
Black Eyed Peas / காராமணி / Lobia - 1/2 cup
Jaggery - 1 cup
Coconut (either grated or finely diced into tiny bits) - 1/4 cup

Cardamom powder - 1tsp


Note: We can use either White and Red Black eye peas or காராமணி (Lobia)!

Method:

Roast the Black Eyed Peas to golden brown without oil and soak it in fresh water for about 7 to 8 hours.




Prepare Rice Flour with the special kind of Rice called Kar Arisi / காரரிசி. Please refer my blog post for preparing Rice Flour!

Pressure cook the soaked peas upto 4 whistles till the peas become soft.  Drain the excess water and keep aside! 

Roast the Rice Flour without oil till the moisture content of the flour goes! If you can see small balls of rice flour, then you can stop roasting!





Take equal quantity of Jaggery equivalent to roasted Rice Flour. (1 : 1)


Dissolve the Jaggery in 1 : 1 measure of water and filter it to remove the impurities. 

Heat the filtered Jaggery water.


Add grated / diced coconut and pressure cooked peas.

When it boils vigorously, add cardamom powder. Now add roasted rice flour slowly to make it a soft dough! Take care no lumps are formed. Switch off the stove!

Allow the dough to come to room temperature.



Prepare small lemon sized rice balls with the dough. You can add little normal water if required for making the dough more softer! 

Make each ball to Sweet Kaaradai by pressing it with your fingers and make small hole in it as shown in the picture!




Cook these Sweet Kaaradais in Idli cooker for about 10 minutes!

Serve hot!




Kaaradai - Salty:



Ingredients:


Homemade Rice Flour - 1 cup
Black Eyed Peas / காராமணி  - 1/5 cup
Coconut (either grated or finely diced into tiny bits) - 1/4 cup
Red Chilli - 2 or 3
Mustard - 1 tsp
Curry Leaves - 1 strand
Asafoetida Powder - 1 pinch
Salt - to taste
Oil - 1 tbsp


Method:



Roast the Black Eyed Peas to golden brown without oil and soak it in fresh water for about 7 to 8 hours.



Prepare Rice Flour with the special kind of Rice called Kar Arisi / காரரிசி. Please refer my blog post for preparing Rice Flour!

Heat the oil in a pan! When it is hot, add mustard seeds! When it splutters, add red chilli, curry leaves and Asafoetida Powder.


Now add grated / diced coconut and pressure cooked peas. Add water and bring it to boil! (Take 1:1 - water and rice flour!)

When it boils vigorously, add required salt. Now add roasted rice flour slowly to make it a soft dough! Take care no lumps are formed. Switch off the stove!


Allow the dough to come to room temperature.

We take these Sweet Kaaradai and Salt Kaaradai with fresh Butter!

Rice - Vella (Jaggerry) Puttu for Navarathri!

Rice - Vella (Jaggery) Puttu


Vella Puttu, a delicious Recipe made with Raw Rice,  is a  traditional recipe which  we make during Navarathri Celebrations! It comes very well if we make it with little patience and concentration! 




I'm thankful to my dear Friend and her Mom in learning this great dish! At the same time, I thank my dear Mother-in-law and my lovable Chithi in explaining the steps! 



Here we go with the Delicious Recipe! 

Ingredients : 


Raw rice : 1 cup
Jaggery : 1 cup
Ghee : 2 tbsp
Grated Coconut : 1 tbsp
Cashew nuts : 4 - 5 nuts
Cardamom : 3 pods
Turmeric powder : 1 pinch
Crystal Salt : 2 pinches

Method :


Wash and Soak Raw Rice for​ 30 - 45 minutes and drain the water completely!




Spread the soaked Raw Rice on a clean dry towel and allow it to dry in shade. It must dry completely. If you take in your hands, it must not stick on to your hands!

Now roast the dried Raw Rice with Cardamom pods, little by little to reddish without oil or ghee in low flame!






Dry grind the roasted Raw Rice to fine powder. You can use a seive to get a fine powder!

Take half glass of water in a sause pan. Add turmeric powder and Crystal salt. Heat this turmeric water very mildly!



Add this mild hot water to the Raw Rice powder little by little and mix it slowly! Don't make it as a dough! It must have moisture and must be crumple enough that if you make a ball of that mixture it must come but if you leave it it must crumple down again! (பிடிச்சா பிடிக்க வரணும்; விட்டா உதிறணும்!)






Now take a clean white cloth! Put the crumple Raw Rice mixture in it and tie it to make a small bundle of it!







Steam cook the bundle for about 15 minutes. (Just like Idli - no whistle needed!) 

Now take the steam cooked Raw Rice mixture and allow it to cool for few minutes. Crumple it with your hands so that no lumps are formed! (You can use a sieve for this or just whip it once in a mixer grinder!) It must be like bread crumbs!



Fry the cashew nuts and grated coconut in Ghee to Golden brown and keep aside.




Dissolve jaggery in 1 cup of water and filter the impurities. We must make a thick syrup with this jaggery water. Bring this jaggery water to boil. It must boil continuously.

When it thickens, test it for right padham!






Take one tsp of this syrup and drop it in water. If you are able to make a thick ball out of it, then this is the right stage! Simmer the stove! 




Pour the Jaggery syrup to the crumpled Raw Rice mixture little by little, stirring continuously and mix well! 

Season with fried coconut and cashew nuts.




Vella Puttu is ready for Neivedhyam!



Note: 

* While steaming the bundle, keep the bundle upside down, i.e., the knot of the bundle must be in the bottom!

* Don't try to add the Raw rice crumples ​to the jaggery syrup! Instead, pour the jaggery syrup to the crumpled Raw rice and mix well! You may think both are same but it makes lot of difference!

Kozhukattai / Modhakam




Kozhukattai Recipe



Ganesh Chaturthi, also known as Vinayaka Chaturthi is the Hindu festival that reveres god Ganesha. A ten-day festival, it starts on the fourth day of Hindu luni-solar calendar month Bhadrapada, which typically falls in Gregorian months of August or September. The festival is marked with installation of Ganesha clay idols privately in homes, or publicly on elaborate pandals (temporary stage). Observations include chanting of Vedic hymns and Hindu texts such as Ganapati Upanishad, prayers and vrata (fasting). Offerings and prasada from the daily prayers, that is distributed from the pandal to the community, include sweets such as modaka believed to be a favorite of the elephant-headed deity. The festival ends on the tenth day after start, wherein the idol is carried in a public procession with music and group chanting, then immersed in nearby water body such as a river or ocean, thereafter the clay idol dissolves and Ganesha is believed to return to Mount Kailasha to Parvati and Shiva.

The primary sweet dish during the festival is modak (kozhukattai or modagam in Tamil). A modak is a dumpling made from rice or wheat flour, stuffed with grated coconut, jaggery, dried fruits and other condiments and steamed or fried.
