Idli Milagai podi

Idli Milagai Podi or Idli chilli powder

Idli Milagai Podi is a coarse powder mixture of ground dry spices that typically contains dried chilis, urad (bean), chickpea, and sesame seeds. We tamilians traditionally use idli milagai podi as a condiment on Idli, and Dosa. Idli milagai podi is eaten as a dipping condiment.

Here I'm giving the recipe, how my mother-in-law taught me.

Ingredients

Bengal Gram Dhall - 1 cup
Black Gram Dhall - 1 cup
Red chilli - 1.5 cups
Sesame seeds - 1 tsp
Tamarind - 1 small amla size
Asafoetida powder - 2 tsp
Crystal Salt - aa required
Oil - for roasting

Method

Soak Sesame seeds in water for 5 to 10 minutes and filter it for impurities. Spread it on a clean dry cloth and allow it to dry.

Remove impurities like seeds, skin and unwanted fibres from tamarind and tear it to small pieces. Keep aside.

Roast dried sesame seeds without oil in very low flame, till it splutters and keep aside.

Heat oil in a pan and roast Bengal gram dhall and Black Gram Dhall separately till golden brown.

Spread it on a big plate and allow it to cool.

Roast Red Chilli till crispy ( seeds inside the chilli will make noise when it is over ) with very little oil in low flame.

Add tamarind pieces, asafoetida powder and salt and continue roasting for few minutes. Switch off the flame. Mix this to the roasted dhall and allow it to cool.

Dry grind the roasted mixture. Add the roasted sesame seeds and grind it to coarse powder.

Store it in a clean dry air tight container. This powder cand be taken as a side dish with jingelly oil for Idli and all varieties of Dosa.
